Anyone For Lemons Again?

Thank you to Jenny for commenting on my previous post, but as recipe comment sounded so delicious, I thought it warranted a little post all of its own!

Finally I have the recipe for lemon curd!
Ingredients:
Grated rind and juice of 2 large lemons, 3 eggs, 4oz/113 grams butter, 8oz/226 grams
sugar
Method:
Beat eggs lightly, mix in lemon rind and juice, butter and sugar. Place in bowl over hot water, heat gently stirring occasionally until sugar has disolved and the curd thickens (this can take a while!) Approximate yield 1lb, if you can resist too many tastings!

Any further scrummy recipes for lemons very welcome.
