Anyone For Lemons?

Every so often it is good to have a complete chill-out day. We had some friends over for supper last night and, even though it wasn’t a particularly late one, it was the end of a fairly busy week. A lie-in / snooze with 2 breakfasts followed, and apart from feeding the strays kittens and tidying up my emails etc. I have been mainly pottering. One of the good things about the morning after a supper party is you get to finish up the good bits. We have just enjoyed tea and lemon meringue pie (one of my specialities) made with real Spanish lemons grown in my friend’s garden. We were discussing what you could make with a constant supply of lemons and couldn’t get beyond cakes and desserts! Maybe that is the way forward … something scrummy made with lemons every weekend. What do you think?

    Anyone for lemons?

    A brilliant lemon merinque pie, and the chilli was delicious too! A friend of mine makes a great lemon curd, so I’ll get the recipe from her and post it here….

    Lemon curd sounds pretty scrummy too. Takes me back to my childhood. I’ll look forward to the recipe!

    Can´t seem to embed a link in a comment by cut and paste so tried by just typing it in above. Swapped between mine and Jacqui´s names to try to see whether that worked but didn´t earlier hence the post above being in Jacqui´s name. Lets see whether this one posts OK.

    In the past the caterer said that she would be willing to waive the deliver cost to Almerimar if people bought a number of things at once.

    Always useful to know where you get get different stuff. However if you have loads of lemons in your garden … I guess you should really make your own!

    Anyone for lemons?

    Finally I have the recipe for lemon curd!

    Ingredients:
    Grated rind and juice of 2 large lemons
    3 eggs
    4oz/113 grams butter
    8oz/226 grams sugar

    Method: Beat eggs lightly, mix in lemon rind and juice, butter and sugar. Place in bowl over hot water, heat gently stirring occasionally until sugar has disolved and the curd thickens (this can take a while!)
    Approximate yield 1lb, if you can resist too many tastings!
